Friday Favorites  – Let’s Get Healthy Edition 

This year I’m going to focus on my health.  I’ve always exercised and tried to eat right.  However, this year I’m going to make it a priority.  I’m one year away from the big 40, so let’s face it I’m not getting any younger and my body doesn’t look the same as it did when I was 21.  Today I’m sharing my top five healthy tips from this week.

Fitness

I have worked out every day this week and I’m planning to start doing a weight training program next week.  I’m really excited that I will get stronger and see some muscle definition (hopefully).

Trying New Foods

I really want the girls to try new foods this year.  So when I saw this recipe being made on the Today show this week I just knew that I needed to make it.   I made Jicama Fries last night and they were a hit!

Healthy Breakfast

My go-to breakfast is still two eggs with sauteed spinach.  It may not sound really good or look appetizing but add some spices to it and you have a great meal to start your day.

Healthy Snack

I’ve seen several people raving about making hard boiled eggs in their Instant Pot.  I jumped on the bandwagon yesterday and made a dozen hard boiled eggs in my Instant Pot.  And let me just say I will not be going back to the stove top method anytime soon!

Dinner

Dinner is always a challenge in our household.  We are always on the go and I have one VERY picky eater.  So I’m always trying to find new healthy dinner options that are family friendly.  I saw a recipe for healthy buffalo chicken meatballs and it sounded so good!  I will be honest it really grossed me out having to handle ground chicken but the finished product was so yummy.

I hope you enjoyed my healthy tips for this week.   I am planning to do one or two posts a month with updates on my weight training program.

  4. Aren’t hard boiled eggs in the Instant Pot life changing!?!?
    I have a SUPER picky 4 year old. She literally won’t eat anything we do. It’s frustrating because it’s really hard to get her to eat healthy meals. Healthy snacks I have a better chance of her eating. But full on meals, forget it. It’s a daily frustration here!
