WHAT WE ARE EATING?

Sunday: homemade pizza Monday: Chicken and Dumplings Tuesday: breakfast for dinner Wednesday: School Spirit Night – Chick Fil A Thursday: spaghetti Friday: dinner out Saturday: date night!!

WHAT I’M REMINISCING ABOUT?

We went to Chicago in December 2017. I have always wanted to go, so we cashed in some airline and hotel points and headed north. I love Chicago!! I’d love to go back during the summer next time. 

WHAT WE’VE BEEN UP TO:

Working!!

WHAT I’M DREADING:

January 13th was just another day for most but it was the day that marked six months since I lost the vision in my right eye. So next month I have my next round of doctor’s visit. I am dreading going from appointment to appointment but thankfully I was able to schedule all four of my appointments for the same week.

WHAT I’M WORKING ON:

I’ve been busy working on my guest list for my 40th Birthday!! We have a game plan put together, so now we just need to get everything ordered and scheduled.

WHAT I’M EXCITED ABOUT:

My 40th Birthday PARTY!! I can’t wait to celebrate with all of my friends. I love to plan parties and this one is going to go down as one of the best parties that I’ve planned.

WHAT I’M WATCHING:

It has been several years since I’ve watched The Bachelor, but the girls really wanted to watch this season. So for the past few weeks the girls and I have had a date on the couch watching The Bachelor. I am a big fan of Hannah B and I can’t stand Demi!!

WHAT I’M LISTENING TO:

I listen to a lot of different types of music and here lately I’ve been listening to Christian worship music. The Elevation Worship station on Amazon music is one of my favorites.
Last week Tenille Arts performed on The Bachelor and I loved her voice. I’ve been listening to several of her songs on repeat this week.

WHAT I’M DOING THIS WEEKEND:

We have basketball and volleyball games on Saturday. Then Danny and I are going to have a much needed date night. Finally, on Sunday we will head over to our friend’s house for a SUPER BOWL party.

WHAT I’M LOOKING FORWARD TO NEXT MONTH:

The Eddins Honor Choir is performing at TMEA (Texas Music Educators Association) in San Antonio next month. Since Kate and Abigail are both apart of the choir I’ll be riding on the bus with all of the kids. I’m also a room mom. I’m so excited to see the girls perform.

WHAT ELSE IS NEW:

I tried to make fancy homemade cookies. I found the perfect cookie recipe but my royal icing recipe was not that great. I still need to work on my royal icing technique.

    • I have had some good classes and some classes that were HORRIBLE!! I am looking forward to subbing more this semester.
